Breakfast beans on toast

Ingredients

  • 1 tablespoon olive oil
  • Rich Bake toast
  • 1 onion, diced
  • 2 cloves garlic, finely chopped
  • 400g can tomatoes, diced
  • 2 tablespoons Tomato Paste
  • 1/3 cup brown sugar
  • 1/4 cup balsamic vinegar
  • 4 poached eggs, to serve

Methods

  • Preheat oven to 180C or 160C fan. Heat oil in a large, heatproof casserole dish to medium heat. Cook onion and garlic until translucent.
  • Add bacon and cook for 3-4 mins. Add beans, tomato paste, tomatoes, sugar and vinegar, stir to combine and cook in oven for 1 hr and 45 mins
  • Remove from oven, stir through beans and cook for a further 15 mins
  • Serve on toast with poached egg
